Last July 2, 2010, my baby had his first swimming experience. We went to our subdivision's clubhouse because we heard that it is newly renovated. Initially I wanted to go to "Club Manila East" which is just 15 minutes away from our house but thinking that my baby will only be able to swim at most 1 hour, we decided to go the clubhouse instead. Luckily, we had the pool all to ourselves because it was a weekday. We did not have work that day because it is Pasig Day. We had a fun filled family bonding day!

My no bake Blueberry Cheesecake
I made blueberry cheesecake this weekend. Try out the recepi below.
Ingredients:
one and a half cups crushed graham crackers
one fourth cup sugar
one half cup melted butter
2 tablespoons unflavored gelatin
one fourth cup water
1 8oz cream cheese, softened
3 eggs, separated
3 tablespoons lemon juice
1 teaspoon grated lemon rind
2 tablespoons sugar
1 250ml pack all-purpose cream
Directions:
1. Combine cracker crumbs, sugar, and butter. Press on the bottom of a springform pan. Refrigerate for about 20 minutes.
2. Soften unflavored gelatin in tap water for about 2 minutes or just until it swells. Melt on low fire then set aside to cool.
3. Beat cream cheese until softened. Slowly stir in egg yolks, dissolved gelatin, lemon rind, sugar, and all purpose cream. Beat until free of lumps, set aside. Beat egg whites until stiff but not dry.
5. Fold in beaten egg whites into cream cheese mixture. Pour into prepared crust, chill until set. Topped it with blueberry.
